Keto Chicken Satay With Peanut Sauce

  Ingredients:

  Chicken marinade

  • 1 pd chicken tenders
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • ½ cup Thai coconut milk in a can
  • 1 tsp garlic, minced
  • ½ tsp curry powder

  Peanut Sauce

  • ½ cup unsweetened natural creamy peanut butter
  • ½ cup Thai coconut milk in a can
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp garlic, minced
  • 1 tbsp lime juice 
  • ½ tsp thai red curry paste

  Instructions:

  1. In a large bowl, combine all ingredients for marinade and mix well.
  2. Add chicken to the bowl, fully coat all surfaces, then cover and let marinate in the refrigerator for 1 hour.
  3. In a microwavable bowl, warm up the peanut butter then add all the sauce ingredients except milk and combine well.
  4. Then slowly mix in coconut milk until fully combined.
  5. Taste and adjust ingredients to your liking.
  6. Preheat oven to 450°F.
  7. Skewer chicken tenders then place on a large baking sheet and cook for 10 mins then flip and cook an additional 5-7 mins or until thoroughly done.
  8. Makes 4 servings.
  9. Plate and serve with warm peanut sauce and enjoy!
