Keto Chicken Alfredo With Zoodles

Ingredients:

  • 4 medium zucchini, spiralized
  • 1 pd chicken breast
  • 4 oz cream cheese
  • ½ cup grated parmesan cheese
  • ¾ cup heavy cream
  • 2 tbsp butter
  • ½ tsp garlic powder
  • 1 tsp italian seasoning
  • ½ tsp salt
  • ¼ tsp pepper

Instructions:

  1. In a skillet, heat 1 tbsp of butter over medium heat then season chicken with salt, pepper and Italian seasoning on both sides. Cook for 7-8 minutes or until 165 degrees.
  2. Remove chicken and cut into 2-inch slices.
  3. Add cream cheese, Parmesan cheese and heavy cream to skillet and stir constantly until well combined.
  4. Continue stirring for 5 minutes or until the sauce has thickened.  
  5. In a separate skillet, heat butter and cook spiralized zucchini for 2-3 minutes.
  6. Add chicken and zucchini back into the first skillet and combine well.
  7. Serve and enjoy!
