Keto Chicken Pesto Casserole

  Ingredients:

  • 1 pd chicken breasts
  • 3 tbsp pesto sauce 
  • 6 oz shredded mozzarella cheese
  • 2 oz grated parmesan cheese
  • ½ tsp Italian seasoning
  • ½ tsp kosher salt
  • ¼ tsp pepper

 Instructions:

  1. Preheat oven to 350°F.
  2. Grease a 9 x 13 baking dish with butter.
  3. Cut chicken into even pieces and evenly place on the bottom of the dish then sprinkle with salt, pepper, and Italian seasoning. 
  4. Cover chicken with a layer of pesto then top with cheese and bake for 40 mins or until chicken is 165 degrees.
  5. Serve and enjoy!
