Keto Friendly Chicken Cacciatore

Ingredients:

  • 4 chicken thighs
  • 2 tbsp butter
  • 1 small yellow pepper, diced
  • 1 small red pepper, diced
  • 28 oz can of diced tomatoes with juice
  • ½ tsp oregano
  • ½ tsp garlic powder
  • ½ tsp red pepper flakes
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 1 tbsp chopped parsley for garnish

Instructions:

  1. In a large skillet, heat butter over medium heat and cook onions until translucent or about 4 minutes.

  2. Add peppers and continue to cook for 3 minutes.

  3. Salt and pepper chicken and cook for 5-6 minutes on each side.

  4. Then add tomatoes, oregano and red pepper flakes and reduce heat, cover and let simmer for 15 minutes.

  5. Plate, garnish with parsley and enjoy!
