Keto Lemon Poppy Muffins

Ingredients:

  • ½ cup almond flour
  • ½ cup coconut flour
  • ⅓ cup Swerve
  • 3 large organic eggs
  • 2 tbsp heavy cream
  • 4 tbsp sour cream
  • 1 tbsp poppy seeds
  • 1 lemon zest
  • 1 tsp baking powder
  • 3 tbsp butter
  • 1 tsp vanilla extract
  • ½ tsp kosher salt

Instructions:

  1. Preheat oven to 350°F.

  2. Grease a muffin pan or use a silicone muffin pan.

  3. In a medium bowl, add flour, poppy seeds, lemon zest, baking powder, swerve, salt and combine well.

  4. Use a hand mixer to beat eggs until fluffy then add in heavy cream, sour cream, butter, vanilla extract and fully combine.

  5. Then slowly add in dry mixture until fully combined.

  6. Pour into muffin pan and bake for 20 minutes or until toothpick test is clean.

  7. Let cool for 10 minutes, serve and enjoy!
