Roasted Parmesan Tomatoes

Ingredients:

  • 6 roma tomatoes
  • ½ cup shredded parmesan cheese
  • 1 tsp chopped fresh oregano
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • Fresh chopped parsley (garnish)

Instructions:

  1. Preheat oven to 400F
  2. Slice tomatoes evenly and arrange on a rimmed baking sheet
  3. Combine spices in a bowl and evenly sprinkle over tomatoes
  4. Then cover slices with parmesan cheese
  5. Bake for 15 minutes then garnish with parsley and serve (makes 6 servings)
