Avocado Stuffed Tacos

Ingredients:

  • 4 avocados, halved and pitted
  • 1 tbsp olive oil
  •  1 pound ground beef
  • 1 medium yellow onion, chopped
  • ¾ cup of cheddar cheese
  • ½ cup of shredded lettuce
  • 1 roma tomato, diced
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp chili powder
  • 1 tsp paprika
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 2 tbsp sour cream

Instructions:

  1. In a large skillet, heat oil and cook onions until translucent.
  2. Add beef, spices and cook beef for 6-7 minutes breaking up meat as you go.
  3. Halve avocados, remove pit and scoop out 1 tbsp of meat from each one. It can be used for later.
  4. Add beef mixture to each avocado then sprinkle with cheese and top with tomato and sour cream.
  5. Serve and enjoy!
