Creamy Chocolate Peanut Butter Truffles

  • 1 1/2 cups heaving whipping cream
  • 1/4 cup unsweetened creamy peanut butter
  • 3/4 cup powered Swerve, divided  
  • 2 oz unsweetened chocolate chips
  • 2 tbsp butter
  • Dash of salt


  1. In a medium saucepan, heat cream, peanut butter, salt, and 1/2 cup of Swerve over medium heat stirring frequently for about 5 minutes.
  2. Place mixture in a bowl and refrigerate for 1 hour.
  3. Line a baking sheet with parchment paper and set aside.
  4. In a microwave safe bowl, heat butter and chocolate for about 30 seconds or until melted.
  5. Stir in 1/4 cup powdered Swerve and mixed well.
  6. Remove mixture from refrigerator and make 12 small balls, then using a fork dip each truffle in chocolate and place on baking sheet.
  7. Refrigerate 1 more hour and enjoy!
