Creamy Roasted Cauliflower

Ingredients:

  • 1 head cauliflower cut into florets
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 oz Italian Pecorino romano cheese, grated
  • 3/4 cup mayonnaise
  • 1 cup heavy whipping cream
  • 1 tsp Worcester sauce
  • 1 1/2 cup shredded swiss cheese

Instructions:

  1. Preheat oven to 450 degrees.
  2. Toss cauliflower in oil, place on baking sheet, and cook for 15 minutes.
  3. While cauliflower is cooking, combine the rest of the ingredients in a medium sauce pan and heat on low.
  4. Stir constantly until cheese is melted.
  5. Remove cauliflower and place in large baking dish, then cover with cheese sauce, and cook for 5 more minutes in the oven.
  6. Serve hot and enjoy!
