Low Carb Sesame Chicken & Broccoli - Running Is My Passport

Low Carb Sesame Chicken & Broccoli

Prep Time: 10 mins Cook Time: 15 mins

  Ingredients:

  • 1 pd chicken breasts cut into 1 in cubes
  • 3 cups of broccoli florets
  • ¼ cup coconut aminos
  • 1 tbsp avocado oil
  • 1 tsp sesame oil
  • 1 tbsp ginger, minced
  • 2 tsp minced garlic
  • 1 tbsp toasted sesame seeds, divided
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp red pepper flakes (garnish)

Instructions:

  1. In a microwavable place broccoli and add a little water then microwave for 2 minutes or until tender.
  2. In a large skillet, heat avocado oil over medium heat and saute for 1-2 minutes.
  3. Add chicken, salt and pepper then cook for 5-6 minutes.
  4. Then add sesame oil and broccoli and cook for an additional minute.
  5. Stir in coconut aminos and half of the sesame seeds and cook for 2 more minutes.
  6. Plate and garnish with remaining sesame seeds and red pepper flakes.
  7. Enjoy!
