Chicken Salad Wraps

Ingredients:

  • 1 lb chicken breast cubed
  • 6 lettuce leaves
  • 2 medium stalks of celery chopped
  • ½ cup Primal Kitchen mayonnaise
  • 1 tbsp dijon mustard
  • 3 oz pecans chopped
  • 1 tbsp fresh parsley chopped
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ sea salt

  Instructions:

  1. Preheat oven to 450 F
  2. Line baking sheet with parchment paper and cook chicken for 15-20 minutes or until thoroughly done
  3. Remove chicken and allow to cool then chop into cubes
  4. In a large bowl combine chicken with the remaining ingredients and combine well
  5. Refrigerate for 1 hour and serve in lettuce leaves
    1. Makes 6 servings
