Ingredients:
- 1 lb chicken breast cubed
- 6 lettuce leaves
- 2 medium stalks of celery chopped
- ½ cup Primal Kitchen mayonnaise
- 1 tbsp dijon mustard
- 3 oz pecans chopped
- 1 tbsp fresh parsley chopped
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ sea salt
Instructions:
- Preheat oven to 450 F
- Line baking sheet with parchment paper and cook chicken for 15-20 minutes or until thoroughly done
- Remove chicken and allow to cool then chop into cubes
- In a large bowl combine chicken with the remaining ingredients and combine well
- Refrigerate for 1 hour and serve in lettuce leaves
- Makes 6 servings
